„Sunt multe mancaruri alese care se consuma de Craciun, in restaurante. De exemplu, terina din carne tocata de porc este ceva simplu de facut si inlocuieste piftia traditionala. Se prepara carnea tocata ca pentru chiftele, cu oua si verdeata. Aceasta se pune la cuptor intr-o tava de cozonac care se tapeteaza cu pesmet. Dupa circa o ora se scoate tava, se lasa la racit, dupa care se pune in tava gelatina in stare lichida. Apoi totul se pune la frigider ca sa se intareasca si se serveste feliat”, ne-a spus Mihaela Dragan, bucatar-sef la restaurantul Silvius.
Terina de somon. O varianta de lux a terinei din carne de porc este pe baza de somon, dar costa ceva mai mult. „Somonul se taie cubulete si se pune la prajit. Dupa ce s-a rumenit se pune intr-o tava de cozonac. Alaturi de cubuletele se somon se pun in straturi ardei rosii copti, spanac, usturoi pisat dupa care se toarna gelatina. Totul se pune la rece pana se solidifica”, ne-a spus Iulian Durdus, bucatar la Yacht Club.
Creveti cu grepfrut. Daca vreti sa mancati ceva si mai exotic pu-teti incerca creveti cu grepfrut, care se prepara foarte usor. Se iau crevetii, care se gasesc in comert congelati, si se prajesc. Crevetii rumeniti se pun pe o farfurie pe a carei margine asezam feliute de grepfrut de pe care am indepartat membrana. Astfel, veti obtine o mancare exotica ce ia ochii oricui.
Secretul unei fripturi perfecte. Bucatarii nostri ne-au invatat si cateva trucuri. De exemplu, ce trebuie facut pentru ca friptura sa iasa ca la restaurant. Poate ati mancat vreodata la restaurant o friptura de porc care vi s-a parut mai buna decat cea facuta acasa. Asta pentru ca bucatarii folosesc un truc: marineaza carnea. Pentru aceasta operatiune va trebuie un litru de otet amestecat cu vin alb, o ceapa mare, un morcov, cativa catei de usturoi, 20 boabe piper, 2-3 frunze de dafin, patrunjel si sare. Toate acestea se fierb, dupa care totul se lasa la racit. Se asaza carnea intr-o cratita, se toarna marinata deasupra si se lasa asa doua zile, timp in care se intoarce de cateva ori. Cand trebuie preparata, carnea se scoate din marinata, se scurge si se pune in tava la cuptor (fara grasime). Se stropeste cu zeama marinatei. Dupa ce s-a rumenit putin, se mai toarna marinata deasupra si se lasa sa se faca bine.
Bucatari de renume s-au adunat saptamana trecuta la un concurs gastronomic, cei mai inventivi fiind premiati. Printre „operele” lor s-au numarat si retetele recomandate cititorilor nostri pentru o cina reusita de Anul Nou.
